Recipe | Oven-roasted vegetables

It's off-day today wuhoo! The feeling of waking up at 1pm is bliss. Gonna head to the pool in a bit but lemme share what I made for lunch earlier on!

Woke up feeling really hungry so I wanted to make a quick lunch. Raided the fridge and found a bunch of veggies so I decided to try roasting them. If you guys follow my food prep posts on Dayre, you'd know I've always eaten veg the salad way so this is my first attempt at roasting!

Chopped up these ingredients:

1 x broccoli
1 x capsicum (half red half yellow)
2 x red onion
1 x garlic (whole bulb)

Seasoning:

Olive oil
Sea salt
Black pepper
Thyme
Basil
Pesto

I didn't measure the amounts exactly, just added a bit of everything to taste. Just remember to go easy on the oil and salt! I think I used about a tablespoon of olive oil.

I then tossed everything together in a large salad bowl. As you can see I forgot my garlic here haha.

Tip: Use foil to cover your baking tray so you don't have to wash it later! ;)

Spread the vegetables out on your baking tray evenly and they're ready to roast! 

I preheated the oven at 180C before prepping the veg, so by the time I chopped everything, the temperature was just right :)

Looks pretty dry but they are thoroughly cooked and softened :) Didn't use a lot of oil so it's not shiny. Didn't use 'wet vegetables' like aubergines or tomatoes so no juices too. Which I don't like anyway haha. So that was perfect! For a more substantial meal, you can bake these with pasta and cheese in a casserole too! #futureplans

Calculated the nutritional information for your reference! So kind of me. If you want to be crazy and count calories for every meal, you may download My Fitness Pal from the app store. But don't get obsessed ;)

So we each consumed less than 220 cal for lunch and were already super full. But yay cos now I have allowance for food tasting later. Going to have Italian food, can't wait!
