I keep finding myself craving for cold stuff like ice cream and that is NOT. GOOD. Which is why I decided to make my own ice cold treats! Perfect time to use my popsicle maker! ;) I've always wanted to try making homemade ice cream but the thought of eating sugar, condensed milk and heavy cream is pretty scary lol aIl that bad calories HAHA. I wanted something yummy but less sinful so I decided to make Ribena yoghurt popsicles instead! PRETTY OR NOT?? Growing up I've always loved Ribena! We always have a bottle of Ribena Cordial at home, even until now! Sometimes Nya Nya would make Ribena jelly for us and we would legit fight over that last cup. Sometimes I use Ribena in my breakfast smoothies too! ;) And during school days when we invited friends over to '做 project', Nai Nai (our helper of 22 years gah miss her so much) would make a large jug of Ribena drink for everyone :) HUANG MINMIN YOU DRINK DUNNO HOW MANY THOUSAND CUPS ALREADY :') Fond memories man. Wow okay I totally digressed again. Back to the popsicles. Since I was using plain yoghurt (which can be a bit sour), I decided to sweeten the mixture a bit so it will taste more like a dessert haha. But instead of using regular processed sugar, I used Ribena Cordial! I love how it is rich in Vitamin C & doesn't contain any artificial flavouring, sweetener nor colouring. Plus it is a pretty shade of burgundy somemore. And I love making pretty food cos I food vain HAHA. BUT GUYS TELL ME THIS IS NOT PRETTY? Not only pretty but really delicious too hao ma. And, these are so easy to make! You don't ever have to buy ice cream again lol. Here's the list of ingredients in three parts! A - Ribena yoghurt mix 1/2 cup plain yoghurt 2 tbsp Ribena Cordial B - Lemon yoghurt mix 1/2 cup plain yoghurt 1 tsp lemon juice Lemon zest C - Blueberry mix 20 blueberries (mashed) 1 tsp Ribena Cordial Method (A) - In a bowl, add 2 tbsp of Ribena Cordial to 1/2 cup of plain yoghurt. Mix well. (B) - In a separate bowl, Add 1 tsp of lemon juice and the zest from about half a lemon to 1/2 cup of plain yoghurt. (C) - In a small dish, mash 20 blueberries with 1 tsp of Ribena Cordial. Once you have all 3 mixes ready, we are ready to make some popsicles! In your popsicle maker/mold, add 5 blueberries in each slot (mine has 4 slots!). Next, evenly spoon in half of (B), followed by all of (A). Gently hit the popsicle old against your counter top to remove any air bubbles, just in case. Evenly distribute all of (C), before adding the remaining half of (B). Remove air bubbles again. Lastly, cover the popsicle mold with the provided caps or your own ice cream sticks & freeze overnight. These popsicles were the perfect treat on a warm afternoon. The sisters loved them too! :) It was a beautiful combination of flavours; tartness from the lemon and yoghurt plus sweetness from the blueberries & Ribena. Totes bagus. If you don't like lemon or blueberries, you can even use your favourite fruits! I think kiwi and strawberries would make really pretty-looking popsicles too! ;) Parents, you can totally make these for your kids too! I personally think these are much healthier treats that kids would definitely love! Did you know, Ribena is made with 100% blackcurrants from New Zealand, and each 200ml glass of Ribena drink provides a child's daily Vitamin C requirements? :) Trust me guys you really have to make these.
